摘  要:本文主要研究硅窗气调保鲜对洛宁金珠沙梨货架期的影响。以新鲜九成熟的金珠沙梨作为实验材料,经称重编号后分为四个实验组,重量依次为3.5 kg、3.5 kg、7.1 kg、10.5 kg,第一组用普通保鲜袋包装,其余三组用硅窗气调保鲜袋包装,均贮藏于温度3℃~4℃、相对湿度85%~90%的冷库中。每间隔10天对各实验组金珠沙梨进行感官评价,并对其失重率、硬度、糖度、色差进行测量。通过实验分析得出,随着贮藏时间的增加,盛装10.5 kg金珠沙梨的硅窗气调保鲜实验组保鲜效果最好,品质维持最佳,可有效延长货架期。This thesis mainly studied the effect of silicon window air conditioning preservation on the shelf life of Luoning Jinzhusha pear.Fresh and ripe Jinzhusha pear was used as experimental material,and was divided into four experimental groups after weighing and numbered,with the weight of 3.5 kg,3.5 kg,7.1 kg and 10.5 kg respectively.The first group was packed in ordinary freshkeeping bags,and the other three groups were packed in air-controlled fresh-keeping bags with silicon window,and stored in cold storage with temperature of 3℃~4℃ and relative humidity of 85%~90%.The weight loss rate,hardness,sugar content and color difference of Jinzhusha pear were measured every 10 days and sensory evaluation was carried out.The experimental results showed that with the increase of storage time,the experimental group containing 10.5 kg Jinzhushu pear had the best preservation effect,maintained the best quality,and could effectively prolong the shelf life.
