摘　　要：基于思维导图的应用来优化食品质量与安全专业本科毕业论文的指导能获得很好的提质效果。文章以食品质量与安全专业毕业论文《原子吸收光谱法测定黄姚豆豉中铜的含量》为案例,通过指导学生在论文选题、框架构建、实验优化、撰写思路等环节如何进行思维导图制作来辅导毕业论文教学过程,以此探讨思维导图在本科毕业论文过程中的实际应用及提质效果。Based on the application of mind mapping to optimize the guidance of the graduation thesis of food quality and safety specialty,we could get a good quality improvement effect.Taking the graduation thesis"determination of copper in Huangyao Douchi by atomic absorption spectrometry"of food quality and safety as an example,instructors guided students in the learning process of graduation thesis by advising how to make mind maps in the aspects of topic selection,framework construction,experiment optimization,writing ideas,so as to discuss the practical application and its quality improvement of mind mapping in the process of undergraduate thesis.
