摘 要:针对核桃渣是核桃油加工后的废弃物,而其蛋白质含量较高的实际情况,分析了其中水分、灰分、蛋白质以及氨基酸组成,并对其进行营养价值评价。实验结果表明:核桃渣的水分含量在5.68%~6.14%之间,灰分含量在4.85%~5.47%之间,蛋白质含量在42.47%~53.58%之间。新疆、湖北及云南三个地区核桃渣的必需氨基酸指数分别为68.60、65.00和70.70,可消化必需氨基酸评分分别为40%、35%和48%。核桃渣的第一限制氨基酸为赖氨酸,其它必需氨基酸含量均高于联合国粮食及农业组织/世界卫生组织标准。因此,核桃渣是一种优质的植物蛋白源,本研究可为其后续植物蛋白产品的开发提供参考依据。Walnut residue is the waste of walnut oil processing,and its protein content is high.The content of moisture,ash and protein and amino acid composition was analyzed and its nutritive value was evaluated.The results show that the moisture content of walnut residue is 5.68%-6.14%,the ash content is 4.85%-5.47%,and the protein content is 42.47%-53.58%.The essential amino acid indexes of walnut residue from Xinjiang,Hubei and Yunnan are 68.60,65.00 and 70.70,respectively,and the digestible essential amino acid scores are 40%,35% and 48%,respectively.The first limiting amino acid of walnut residue is lysine,and the content of other essential amino acids is higher than that confirmed by the standard of Food and Agriculture Organization of the United Nations/World Health Organization.Therefore,the walnut residue is a high quality vegetable protein source,and this study can provide a reference for the future development of vegetable protein products.
