摘 要:谷氨酸是一种酸性氨基酸,是生物机体氮代谢的基本氨基酸之一。谷氨酸发酵既是味精生产过程中一个不可缺少的关键环节,也是目前通气发酵产业中,生产厂家最多、产量最大的产业。味精为有鲜味的物质,学名谷氨酸钠,是人们日常生活中常用的调味品。发酵设备管理是保证发酵生产正常有序开展的关键,直接影响到谷氨酸的生产效率。鉴于此,对谷氨酸生产设备管理现状及发展趋势进行了分析,并对其发展前景进行了展望,以期为进一步提高谷氨酸发酵装备管理水平、提升谷氨酸生产效率和产品质量、增强企业活力、促进谷氨酸产业综合经济效益不断提高提供参考。Glutamate is an acidic amino acid,which is one of the basic amino acids for nitrogen metabolism in biological organisms glutamic acid fermentation is an indispensable key link in the production process of monosodium glutamate,and it is also the industry with the largest number of manufacturers and the largest product output in the current aeration fermentation industry.Monosodium glutamate is a substance with umami taste,the scientific name is sodium glutamate,and it is a commonly used condiment in people’s daily life.The management of fermentation equipment is the key to ensure the normal and orderly development of fermentation production,which will directly affect the production efficiency of glutamic acid.In view of this,the management status and development trend of glutamic acid production equipment were analyzed,and the development prospects are prospected,in order to further improve the management level of glutamic acid fermentation equipment,improve the production efficiency and product quality of glutamic acid,enhance the vitality of enterprise and promote the continuous improvement of comprehensive economic benefits of the glutamic acid industry.
