摘 要:在大麦发芽及幼苗生长阶段添加不同质量浓度的黄原胶溶液,研究黄原胶对大麦幼苗麦绿素合成及品质的影响。利用1、10和100 mg/L的黄原胶溶液处理在发芽期和生长期的大麦幼苗,制备麦绿素产品,分析检测麦绿素各营养成分质量分数。与对照组相比,1 mg/L的黄原胶溶液处理的大麦幼苗制得的麦绿素中可溶性总糖质量分数提升了17.4%,可溶性蛋白质量分数提升了18.2%,叶绿素质量分数提升了6.3%,可溶性固形物质量分数提升了9.7%,总黄酮质量分数提升了7.2%,SOD活性提升了12.8%。结果表明,低质量浓度黄原胶溶液能够显著提升大麦幼苗麦绿素品质。The effects of xanthan on the synthesis and quality of wheat green in barley seedlings were studied by adding different contents of xanthan during germination and seedling growth.Barley seedlings were treated with 1,10 and 100 mg/L xanthan and the wheat green products were prepared with the treated barley seedlings.The contents of nutrient component in wheat green were analyzed and detected.Compared with the control group,the total soluble sugar,soluble protein,chlorophyll,soluble solid,total flavonoids and SOD activity of barley seedlings treated with 1 mg/L xanthan increased by 17.4%,18.2%,6.3%,9.7%,7.2%and 12.8%,respectively.The results showed that low content xanthan could significantly improve the quality of wheat green in barley seedlings.
