摘  要:宝丰酒是中原地区清香型白酒的代表,其酿造用曲中所含微生物种类繁多,其中真菌对酒的风格品质起着重要作用。明晰清茬曲、红心曲、后火曲中所含真菌的数量、种类,确定优势菌群,为揭示宝丰酒酿造用曲真菌群落的结构差异及酿酒功能性真菌的筛选奠定基础。从宝丰酒厂收集清茬曲、红心曲、后火曲样品,采用高通量测序技术分别对三种大曲ITS2区域进行测序,分析三种大曲物种组成和群落组成差异。三种大曲样品优势菌门均为Asccmycota(子囊菌门),清茬曲中真菌的优势菌属为Thermoascus(热子囊菌属),红心曲中真菌的优势菌属为Thermoascus(热子囊菌属)、Rasamsonia(罗山松属)、Aspergillus(曲霉属),后火曲中真菌的优势菌属为Thermoascus(热子囊菌属)、Aspergillus(曲霉属)。在真菌的多样性方面,红心曲多于后火曲,后火曲多于清茬曲。Baofeng liquor is the representative of Qingxiang Baijiu in central plains of China.There are many kinds of microorganisms in its brewing,and fungi plays an important role in the style and quality of liquor.The main purpose of this paper was to clarify the quantity and species of fungi contained in Baofeng Qingcha-Qu,Hongxin-Qu and Houhuo-Qu,and determine the dominant flora,so as to lay a foundation for revealing the differences of fungal community structure of Baofeng brewing koji and screening functional fungi for brewing.The samples of qingstubble koji,Hongxin koji and houhuo koji were collected from Baofeng distillery.The ITS2 region three Daqu was sequenced by high-throughput sequencing technology to analyze the differences of species composition and community composition.The dominant fungal phyla of the three Daqu samples were all Accmycota.The dominant genus in Qincha-Qu was Thermoascus,and the dominant genus in Hongxin-Qu was Thermoascus,Rasamsonia and Aspergillus,and the dominant genus in Houhuo-Qu was Thermoascus and Aspergillus.In terms of fungal diversity,Hongxin-Qu was more than Houhuo-Qu,and Houhuo-Qu was more than Qincha-Qu.
