摘　　要：目的:对甘肃省天水市餐饮单位餐饮具消毒效果进行监测分析,为市场监管部门行政执法提供方向和数据支撑。方法:按照国家标准及相关检验检测方法,对天水市餐饮单位餐饮具进行随机抽检,主要检测游离性余氯、阴离子合成洗涤剂(十二烷基苯磺酸钠)、大肠菌群项目,并对检测结果进行统计分析。结果:2019—2021年共检测各类餐饮具4 780批次,总合格率为77.59%,其中2019年检测样品1 710批次,合格率为69.01%,2020年检测样品1 670批次,合格率为80.60%,2021年检测样品1 400批次,合格率为84.50%。结论:虽然天水市餐饮单位餐饮具检验合格率逐年提升,但卫生问题仍较为突出,还需进一步加强餐饮行业与监管部门的协同发展,保障饮食安全。Objective: The disinfection effect of tableware in catering units was monitored and analyzed in Tianshui city, Gansu province, in order to provide direction and data support for the administrative law enforcement of market supervision departments. Method: According to national standards and relevant inspection and testing methods, random sampling inspection was conducted on tableware in catering units of Tianshui city, mainly detecting free residual chlorine, anionic synthetic detergent(sodium dodecylbenzene sulfonate) and coliform bacteria, and statistical analysis was conducted on the test results. Result: From 2019 to 2021, a total of 4 780 batches of various tableware were tested, with a total pass rate of 77.59%. Among them, 1 710 batches of samples were tested in 2019, with a pass rate of 69.01%;1 670 batches of samples were tested in 2020, with a pass rate of 80.60%;and 1 400 batches of samples were tested in 2021, with a pass rate of 84.50%. Conclusion: Although the qualified rate of tableware inspection in catering units in Tianshui city is increasing year by year, the sanitary problems are still prominent. It is necessary to further strengthen the coordinated development of catering industry and regulatory authorities to ensure food safety.
