摘  要:采用随机采样法在若干市场采集3种螃蟹,共43份样品,利用电感耦合等离子体质谱法测定螃蟹不同可食用部位的镉含量.结果43份样品中,镉检出率为100%.3种螃蟹蟹膏/蟹黄中的镉含量均大于蟹肉中镉含量,蟹体镉含量情况为面包蟹>梭子蟹>大闸蟹,差异具有统计学意义(P<0.05).梭子蟹和面包蟹中镉含量超标,在摄入时需注意摄入量,镉主要集中在蟹膏/蟹黄部位,与螃蟹品种无关.A total of 43 samples of three kinds of crabs were collected from several markets by random sampling method. Cadmium content in the samples was determined by inductively coupled plasma mass spectrometry. The results showed that the detection rate of cadmium in 43 samples was 100%. The cadmium content in hepatopanceras was higher than that in crab meat,and the cadmium content in crab body ranked as brown crabs > Portunus > Eriocheir sinensis,with statistical significance( P < 0. 05). It can be concluded that the cadmium content in Portunus and brown crabs exceeds that of the standard,and there is a risk in eating. Consumers should be careful while eating. Cadmium is mainly concentrated in the hepatopanceras and has nothing to do with crab species.
