摘 要:稻虾综合种养模式下小龙虾的膳食风险是社会各界广泛关注的重点问题之一。本文通过综述国内外相关文献报道,从农药残留、重金属富集、渔药残留以及其他有毒有害物质污染等4个方面剖析了稻虾综合种养模式下小龙虾体内污染物的来源、含量、分布及其膳食风险,总结发现稻虾综合种养模式下小龙虾的整体膳食风险较小,不会对消费群体的身体健康造成不利影响。建议消费者不要过量摄食小龙虾,并避免摄食肝胰腺、鳃以及外骨骼等部位,同时建议监督管理部门进一步加强稻虾综合种养系统风险评估。The dietary risk of Procambarus clarkii under the comprehensive cultivation mode of rice and shrimp is one of the key issues widely concerned by all sectors of society.By summarizing the relevant literature reports at home and abroad,this paper analyzes the source,content,distribution and dietary risk of pollutants in Procambarus clarkii under the comprehensive cultivation mode of rice and shrimp from four aspects:pesticide residues,heavy metal enrichment,fishery drug residues and other toxic and harmful substance pollution.It is concluded that the overall dietary risk of Procambarus clarkii under the comprehensive cultivation mode of rice and shrimp is small and will not have an adverse impact on the human health of consumer groups.It is suggested that consumers should not eat Procambarus clarkii excessively,and avoid eating hepatopancreas,gills,exoskeleton and other parts.At the same time,it is suggested that the supervision and management department should further strengthen the risk assessment of rice and shrimp comprehensive breeding system.
