摘  要:原料乳是生产各类乳制品的基础原料,其品质直接决定了乳制品的质量和安全。在利益的驱使下,原料乳中掺假一度成为影响乳品安全的最主要问题。随着国家对食品安全监管的不断加强和严格执法,乳中掺入非乳成分,甚至有害物质的现象得到有效控制。但是近年来,原料乳掺假呈现新现象,如向羊乳、驼乳等乳中掺入牛乳。而这类掺假物难以用常规乳中掺假物的检测方法予以鉴别。在概括介绍国内原料乳掺假和常规检测的基础上,重点总结新型乳中掺假物的检测方法,如电泳法、高效液相色谱法、电子鼻(舌)法、近红外光谱分析法、低场核磁共振技术、聚合酶链反应和酶联免疫吸附试验等,并对这些方法的优缺点进行比较,为原料乳掺假的检测技术提供基础资料。Raw milk is the basic raw material for the production of various dairy products,and its quality directly determines the quality and safety of dairy products.Driven by interests,adulteration in raw milk once became the most important problem affecting the safety of dairy products.With the continuous strengthening of national food safety supervision and strict law enforcement,non-dairy ingredients incorporated into milk and even harmful substances in milk have been effectively controlled.However,in recent years,the adulteration of raw milk has presented a new phenomenon,such as blending cow milk into goat milk,camel milk and other milk.But it is difficult to identify such adulterants by conventional methods of detecting adulterants in milk.Based on a general introduction of domestic raw milk adulteration and routine detection,focus on summarizing the detection methods of new types of milk adulteration,such as electrophoresis,high performance liquid chromatography,electronic nose(tongue)method,near-infrared spectroscopy,low-field nuclear magnetic resonance technology,polymerase chain reaction and enzyme-linked immunosorbent assay,etc.Compared the advantages and disadvantages of these methods,basic information for the detection technology of raw milk adulteration is provided.
