摘　　要：牛初乳含有丰富的营养物质和免疫因子,是国内外功能性食品开发的热点之一。目前我国牛初乳产业还处在初加工阶段,生产企业只有不断探索和完善制造技术,才是行业发展的重要保障。该文主要对牛初乳现行制造技术、先进生产工艺以及制造技术的发展趋势进行综述,并探讨了牛初乳产品开发的前景与要点。Bovine colostrum is rich in nutrients and immune factors and is one of the hot spots in the development of functional food at home and abroad.At present,the colostrum industry in China is still in the initial processing stage.Colostrum production enterprises only keep exploring and improving manufacturing technology,which is an important guarantee for the development of the industry.In this paper,the current and advanced manufacturing technology,and development trend of bovine colostrum are reviewed.The prospect and key points of bovine colostrum product development are discussed either.
