摘  要:为推进包装正面(Front of Package,FOP)标签在鲜活淡水鱼中的应用,引导消费者轻松识别和选购营养价值高的淡水鱼,本研究主要参考瑞典锁孔(Keyhole)标签、美国心脏检查标志、新加坡较健康选择标志、美国指引星标签、荷兰选择标识、美国NuVal评分标签,借鉴这些标签的营养素度量法、评价鲜活淡水鱼的营养价值、信息显示形式等国际实践经验,基于《中国食物成分表》(第6版第2册)的花骨鱼(Hemibarbus maculatus bleeker)、鲫(Carassius auratus)、黄颡鱼(Pelteobagrus fulvidraco)、鲢(Hypophthalmichthys molitrix)、鲟鱼(Acipenser sinensis)、草鱼(Ctenopharyngodon idella)、雅鱼(Schizothorax)、丁桂鱼(Tinca tinca)、斑鳠(Mystus guttatus)、回头鱼(Back fish)、鮰鱼(Leiocassis longirostris)、钳鱼(Ictalurus Punctatus)营养数据,构建富含营养素食物(nutrient-rich foods,NRF)9.3模型,开展营养评价发现,12种鲜活淡水鱼的NRF9.3为0.47~1.16,鼓励性营养素含量均高于限制性营养素,其中,花骨鱼的营养价值最高。通过比较,12种鲜活淡水鱼适合采用评级FOP标签方案,建议将NRF9.3为0~0.49、0.50~0.99、1.00及以上的淡水鱼分别标示为1星级、2星级以及3星级,星级越高,代表淡水鱼的整体营养价值越高。In order to promote the application of front of package(FOP)labeling to fresh freshwater fishes and guide consumers to easily identify and purchase freshwater fishes with high nutritional values,this study drew on international practical experiences of nutrient profile,nutritional values evaluation of fresh freshwater fish and information display forms from Keyhole symbol in Sweden,Heart-check mark in America,Healthier choice symbol in Singapore,Guiding stars labeling in America,Choices logo in the Netherlands and NuVal nutritional scoring labeling in America.Then the nutrient-rich foods(NRF)9.3 models were constructed based on the nutritional data of bonefish(Hemibarbus maculatus bleeker),crucian(Carassius auratus),banded catfish(Pelteobagrus fulvidraco),silver carp(Hypophthalmichthys molitrix),sturgeon(Acipenser sinensis),grass carp(Ctenopharyngodon idella),Ya fish(Schizothorax),tench(Tinca tinca),spotted longbarbel catfish(Mystus guttatus),back fish,longsnout catfish(Leiocassis longirostris)and channel catfish(Ictalurus Punctatus)from China Food Composition Tables(Volume 2,6th Edition).It was found that NRF9.3 of 12 kinds of fresh freshwater fishes was in the range of 0.47-1.16,indicating that the contents of recommended nutrients were higher than that of limited nutrients.Among them,bonefish presented the highest nutritional value.Through comparison,scoring FOP labeling scheme was suitable for 12 kinds of fresh freshwater fishes.The freshwater fishes with NRF9.3 of 0-0.49,0.50-0.99,1.00 and above 1 were suggested to label with 1-star,2-star and 3-star,respectively.The freshwater fishes with higher star level possessed higher overall nutritional values.
