摘 要:目的:研究制备一种用于包装食物,防止食物变质以及使用起来对人体健康无害,可广泛应用于果蔬、肉制品、糕点以及快餐等各类食品的包装纸膜。方法:以玉米苞叶为原料,采用绿色环保的酶-化学结合法,制备膳食纤维,再加入蜂蜡,成膜剂和甘油制备得到一种可食性包装纸膜,通过扫描电镜、红外光谱、X射线衍射对薄膜进行表征分析。结果:制得的膳食纤维得率为52.74%。当膳食纤维与蒸馏水料液比为1:40,CMC:海藻酸钠质量比为1:2,成膜剂添加量3%,蜂蜡添加量1.5%,甘油添加量2.5%时薄膜的性能最好。结论:该产品容易制备,使用起来卫生安全,具有优良的弹性和强度,以及明显的阻隔性。This study was carried out to develop an edible packaging film that can be used for a wide range of food products such as fruits and vegetables,meat products,cakes and fast food,which can prevent food spoilage and is not harmful to human health.A green enzyme-chemical combination method was used to prepare dietary fibre from maize bracts,adding beeswax,filmogen and glycerol to produce an edible packaging paper film,which was characterised by Scanning Electron Microscopy(SEM),Infrared Spectroscopy(FTIR)and X-Ray Diffraction(XRD).The yield of dietary fibre was 52.74%.The best performance was obtained when the ratio of dietary fibre to distilled water was 1:40,the mass ratio of CMC:sodium alginate was 1:2,filmogen was added at 3%,beeswax at 1.5%and glycerol at 2.5%.The results indicated that the product was easy to prepare,hygienic and safe to use,with excellent elasticity and strength,as well as significant barrier properties。
