摘 要:【目的】探明特早熟柑橘采后UV-B辐照处理对果皮色素的影响,为云南特早熟柑橘采后外观品质的改善提供依据。【方法】以云南特早熟柑橘兴津为试验材料,通过使用辐照强度为100μW/cm^(2)的中波紫外线(UV-B)对其进行采后处理,处理时间为0 h(CK)、24 h和48 h,并在贮藏期定期(0 d、10 d、20 d、30 d)取样测定果皮中的叶绿素、类胡萝卜素、色素代谢相关基因相对表达量等指标。【结果】UV-B辐照剂量不同对特早熟柑橘果皮色泽的影响不同。UV-B辐照显著提高特早熟柑橘果皮的明亮度和黄色度,降低叶绿素含量,提高类胡萝卜素含量;提高PaO、RCCR和PSY基因的相对表达量,促进特早熟柑橘贮藏期脱绿(叶绿素降解),辐照48 h有利于果皮贮藏期类胡萝卜素的累积,对提高特早熟柑橘在贮藏期的色泽品质具有重要作用。【结论】特早熟柑橘采后使用辐照强度为100μW/cm^(2)的UV-B处理,可有效改善特早熟柑橘果实的表皮色泽,以UV-B辐照48 h贮藏20 d效果最佳。【Objective】The effect of UV-B irradiation treatment on peel pigment of postharvest early-maturing citrus is explored,which provides basis for postharvest treatment method to improve the appearance and quality of early-maturing citrus in Yunnan Province.【Method】The Yunnan early-maturing citrus‘Xingjin’was used as the test material,and the postharvest treatment was carried out by using ultraviolet B(UV-B)with an irradiation intensity of 100μW/cm^(2),and the treatment time was set to 0 h(CK),24 h and 48 h.During the storage period(0 d,10 d,20 d and 30 d),samples were taken regularly to determine the relative expression of chlorophyll,carotenoids,and gene involved in pigment metabolism in the peel.【Result】Different irradiation intensity of UV-B had different impact on the peel color of early-maturing citrus.UV-B irradiation significantly improved the brightness and yellowness of early-maturing citrus peels,decreased the chlorophyll content and increased the carotenoid content.Irradiation can increase the relative expression of PaO,RCCR and PSY genes,and promote degreening(chlorophyll degradation)during storage of early-maturing citrus.Under UV-B irradiation for 48 h,it was beneficial to the accumulation of carotenoids in peel during storage,and was important to improve the color and quality of early-maturing citrus during storage.【Conclusion】The suggested irradiation treatment to postharvest early-maturing citrus is 100μW/cm^(2) UV-B,which can effectively improve the peel color of early-maturing citrus.UV-B irradiation for 48 h is the best for 20 d of storage.
