摘 要:预制菜产业是现代食品工业发展的新风口,受到社会各界的高度关注。四川省是食品工业大省,在川菜工业化、川菜调味品方面取得了一定的成绩,具有良好的发展预制菜产业条件,但是目前存在一些不足和缺陷。为了更好地促进四川省预制菜产业的创新发展,在提出预制菜的定义基础上,分析了预制菜当前的市场状况及发展前景,提出了预制菜产业创新发展的五大建议(面向一日三餐与美味方便;掌握适度保藏与品质成本;发展智能装备与智慧制造;坚持绿色低碳与营养保健;打造品牌场景与云端商超),以及预制菜的标准化生产、严格安全监管等建议,以期为全国预制菜产业的高质量发展提供参考。The prefabricated food industry was a new trend in the development of the modern food industry,and it was highly concerned by all sectors of society.Sichuan province was a major province in the food industry,and some achievements had been made in the industrialization of Sichuan cuisine and Sichuan cuisine condiments.It had good conditions for the development of prefabricated food industry,but there were still some shortcomings and defects.The innovating and development of the prefabricated food industry in Sichuan provincewas promoted.Based on the definition of prefabricated food,the current market situation and development prospect of prefabricated foodwere analyzed,and five suggestions for the innovation and development of prefabricated foodwere put forward(three meals a day and delicious convenience;masterappropriate preservation and quality cost;developing intelligent equipment and intelligent manufacturing;adhere to green low-carbon and nutritional health care;make brand scene and cloud business super).As well as the standardized production of prefabricatedfood,strict safety supervision and other suggestions,theycouldprovide reference for the high quality development of the nation prefabricated food industry.
