摘  要:研究食品营养强化剂柠檬酸钙的安全指标,合并三水以及四水柠檬酸钙标准,以促进行业发展。参照相关法律法规和标准,对我国柠檬酸钙行业进行调研,通过对目前柠檬酸钙的关键指标进行比较及检测分析,并且对10批次三水柠檬酸钙以及10批次四水柠檬酸钙进行实验验证。结果表明,合并后的柠檬酸钙标准拟设置的指标包含感官、柠檬酸钙(Ca_(3)(C_(6)H_(5)O_(7))_(2))含量(以干基计)、干燥减量(水分)、盐酸不溶物、氟化物、铅、总砷、总汞、重金属(以Pb计)。10批次三水柠檬酸钙和10批次四水柠檬酸钙产品均符合要求。拟设置的技术指标和建立的实验方法具有可行性。The safety indexes of food nutrition fortifier calcium citrate were studied,and combining standards of calcium citrate trihydrate and calcium citrate tetrahydrate,the development of the industry was promoted.Based on domestic and foreign related standards and regulations,a survey of domestic calcium citrate industry was performed.Through the comparison,detection and analysis of the key indicators of calcium citrate,and 10 batches of calcium citrate trihydrate and 10 batches of calcium citrate tetrahydrate were carried out for experimental verification.Results showed that the technical indicators were set up for combined standard of calcium citrate include sensory,calcium citrate(Ca_(3)(C_(6)H_(5)O_(7))_(2))content(based on dry basis),loss on drying(moisture),hydrochloric acid insolubles,fluoride,lead,total arsenic,total mercury,heavy metals(based on Pb).All batches of products could meet the requirements.The proposed technical indicators and established test methods are feasible.
