摘 要:目的从不同海洋源肽粉的特征分子组成出发,建立其快速分类鉴别模型。方法以牡蛎肽粉(oyster peptide powder,OPP)、海参肽粉(sea cucumber peptide powder,SCPP)、南极磷虾肽粉(Antarctic krill peptide powder,AKPP)和鱼皮胶原肽粉(fish skin collagen peptide powder,FSCPP)4种最具代表性的海洋源肽粉为研究对象,基于单糖分子组成以及傅里叶变换红外光谱(Fourier transform infrared spectroscopy,FTIR)差异,结合主成分分析(principal component analysis,PCA)和正交偏最小二乘判别分析(orthogonal partial least-squares discriminant analysis,OPLS-DA)等化学计量学分析手段对肽粉进行快速分类鉴别。结果基于总糖和单糖分子组成的PCA模型可以实现4类海洋源肽粉的分类鉴别;基于红外光谱的OPLS-DA模型能够对4类肽粉进行有效分类鉴别,1209~976 cm^(-1)、1853~1309 cm^(-1)和3545~2700 cm^(-1)是对分类具有显著贡献作用的红外波段。此外,将红外光谱与总糖及单糖组成数据融合,能够进一步提高OPLS-DA模型的分类效果。结论快速分类鉴别模型可为肽粉的质量控制和掺假检测提供参考。Objective To establish rapid classification and identification models of different categories of marine-derived peptide powders based on their characteristic molecular composition.Methods Four kinds of most representative categories of marine-derived peptide powders,namely,oyster peptide powder(OPP),sea cucumber peptide powder(SCPP),Antarctic krill peptide powder(AKPP),and fish skin collagen peptide powder(FSCPP)were used as research objects in this study.Chemometrics methods including principal component analysis(PCA)and orthogonal partial least-squares discriminant analysis(OPLS-DA)were employed to rapidly classify and identify them based on the differences between monosaccharide composition and Fourier transform infrared spectroscopy(FTIR).Results The PCA model based on the total sugar content and monosaccharide composition could achieve the classification of 4 categories of marine-derived peptide powders;the OPLS-DA model based on the infrared spectra also offered an effective classification of them,the FTIR spectra ranging from several special wave numbers,including 1209‒976 cm^(‒1),1853‒1309 cm^(‒1),and 3545‒2700 cm^(‒1),significantly contributed to the classification of them.In addition,the combination of infrared spectra with total sugar content and monosaccharide composition could further improve the classification of the OPLS-DA model.Conclusion The rapid classification and identification model can provide a reference for quality control and adulteration detection of peptide powders.
