摘 要:本研究主要探讨了两种方法测定浓香型大曲曲药发酵力。通过CO_(2)减重法和乙醇高效液相色谱法两种方法进行对比。乙醇高效液相色谱法的测定结果在0~5 g/100 mL浓度线性范围内,相关系数为0.99998,检出限为0.0016 g/100 mL,定量限为0.0048 g/100 mL,具有良好的线性关系。采用乙醇高效液相色谱法和CO_(2)减量法同时测定大曲发酵力,结果相差不大,乙醇高效液相色谱法同样适用于浓香型大曲曲药发酵力的测定。This study mainly discussed two methods to determine the fermentation power of Luzhou-flavor Daqu.Through the comparison of CO_(2) weight loss method and ethanol high phase liquid chromatography method(HPLC)method.The results of ethanol liquid chromatography are in the linear range of 0~5 g/100 mL concentration,the correlation coefficient is 0.99998,the detection limit is 0.0016 g/100 mL,and the quantitative limit is 0.0048 g/100 mL,which has a good linear relationship.Ethanol high performance liquid chromatography and CO_(2) reduction method were used to determine the fermentation power of Daqu at the same time,and the results were similar.Ethanol high performance liquid chromatography was also suitable for the determination of the fermentation power of Luzhou flavor Daqu.
