摘 要:以4种秋海棠为试验材料,采用顶空固相微萃取(HS-SPME)与气相色谱-质谱(GC-MS)联用技术测定花香挥发性物质,并通过香气活性值(OAV)和主成分分析鉴定不同种类的特征香气和主要香气物质.结果表明:(1)4个秋海棠种类中共检测到54种挥发性物质,萜烯类和苯类/苯丙素类化合物种类较为丰富,各种类花朵挥发性物质总含量不同,柳叶秋海棠最高,其次为中华秋海棠和假厚叶秋海棠,里氏秋海棠最低;(2)4种秋海棠中共鉴定出15种特征香气物质(OAV≥1),芳樟醇、β-月桂烯、D-柠檬烯、癸醛在不同种类中具有较高香气活性值,与各种类自身的特征香气物质一起形成各自独特香气,假厚叶秋海棠花朵更加突出果香气味,中华秋海棠花朵则更加突出草香气味,柳叶秋海棠花朵兼有果香、甜香气味,里氏秋海棠花朵则具有花香、果香和甜香气味;(3)各种类主要香气物质差异大,假厚叶秋海棠的主要香气物质为β-石竹烯,中华秋海棠的是α-法呢烯、β-罗勒烯、苯乙腈等,柳叶秋海棠中天竺葵醛、苯乙醇等贡献大,里氏秋海棠中则为二丁基羟基甲苯和十二醛.Four kind of Begonia species were used as experimental materials.The volatile compounds in flower aroma were determined by headspace solid phase microextraction(HS-SPME)and gas chromatographymass spectrometry(GC-MS).Different characteristic aroma and main aroma compounds were identified by odar activity value(OAV)and principal component analysis.The results showed that:(1)Fifty-four kinds of volatile compounds were detected in 4 species,the contents of terpenes and benzene/phenylpropanoid compounds are rich.The volatile substances and their total release of 4 species are different.The most volatile substances and total release are in B.fuchsioides,followed by B.grandis and B.pseudodryadis,and the lowest ones are in B.listada;(2)There are 15 characteristic aroma substances(OAV≥1),linalool,β-myrcene,D-limonene and decanal have high aroma activity values in 4 species,forming unique aroma together with their own characteristic aroma substances.The aroma characteristics of B.pseudodryadis flowers are mainly fruity ester-like flavor,green-like flavor is the most prominent in B.grandis,and B.fuchsioides is mainly mixed with fruity ester-like and sweet-like flavor;flora,fruity ester-like and sweet-like flavor are the most in B.listada;(3)The main aroma substance of B.pseudodryadis is caryophyllene,α-farneseneβ-ocimene and benzyl nitrile,etc.is mainly in B.grandis,nonanal and phenylethyl alcohol in B.fuchsioides contribute greatly,while butylated hydroxytoluene and dodecanal has high contents in B.listada.
