摘 要:采用湿法消化-火焰原子吸收分光光度法测定不同月份鄂莲5号莲藕的总含铁量及其淀粉、蛋白、藕渣含铁量,探究该莲藕中铁元素含量周年动态变化,并对铁元素的赋存形态加以分析。结果表明:鄂莲5号莲藕总含铁量及其淀粉、藕渣含铁量在全年生长期内总体呈现先升高后降低的趋势,并都在8月份达到最大。蛋白中含铁量于1月份达到全年最高,随后波动较大,但总体呈下降趋势。鄂莲5号莲藕全年含铁量处于较高水平,为(35.60±1.41)mg/kg~(116.40±2.86)mg/kg,高于水稻、马铃薯、菠菜等膳食。莲藕淀粉、蛋白、藕渣全年含铁量分别为(35.19±1.74)mg/kg~(126.51±3.13)mg/kg、(100.12±7.09)mg/kg~(393.31±9.25)mg/kg、(50.34±1.95)mg/kg~(170.73±2.35)mg/kg。全年中,淀粉铁为鄂莲5号莲藕的铁元素主要赋存形态,占总含铁量的36.02%~67.32%,高于蛋白铁、藕渣铁和无机及其他有机结合态铁。This subject adopted the wet digesting-flame atomic absorption spectrophotometry to determine the total iron content and the iron content in starch,protein,and residue of the Elian No.5 lotus root in different month.The annual dynamic variation of the total iron content in the Elian No.5 lotus root was explored,and the iron occurrence form was analyzed.The results showed that during the annual growth period of Elian No.5 lotus root,its total iron content and the iron content in starch and residue increased first and then decreased,reaching the maximum in August.In the whole year,the iron content in the protein of lotus root reached the highest in January with great fluctuation,but showed a downward trend as a whole.The annual iron content of Elian No.5 lotus root was at a high level,ranging from(35.60±1.41)mg/kg to(116.40±2.86)mg/kg,higher than that of rice,potato,spinach,and so on.The range of annual iron content in the starch,protein,and residue of lotus root were(35.19±1.74)mg/kg-(126.51±3.13)mg/kg,(100.12±7.09)mg/kg-(393.31±9.25)mg/kg,(50.34±1.95)mg/kg-(170.73±2.35)mg/kg,respectively.In the whole year,the starch iron was the main occurrence form of iron in the lotus root,accounting for 36.02%-67.32%of the total iron content,which was higher than the protein iron,residue iron,and inorganic and other organic iron.
