摘  要:采用衰减全反射傅里叶变换红外光谱法(attenuated total reflectance-Fourier transform infrared spectroscopy,ATR-FTIR)结合向量夹角转化,快速测定牛油火锅底料中固体石蜡的含量。依据ATR-FTIR采集固体石蜡及各建模样本的红外光谱,通过向量夹角转换法,建立样本光谱和固体石蜡光谱的夹角值与固体石蜡含量的标准曲线,预测牛油火锅底料中石蜡添加量,实现快速分析。结果表明,所建立的标准曲线相关系数达到0.990 9,方法的相对标准偏差(relative standard deviation,RSD)为0.19%~0.33%,回收率为96.63%~108.34%。所建立的分析方法简便快捷,测定结果优于气相色谱法,可以推广应用到其他多组分复杂体系中石蜡残留量的检测。Attenuated total reflectance-Fourier transform infrared spectroscopy(ATR-FTIR) combined with vector angle conversion was applied to establish a rapid detection method of solid paraffin in butter hot pot seasoning.The infrared spectra of solid paraffin and modeling samples were collected by ATR-FTIR.Using vector angle conversion method,the standard curve between the angle value of sample spectra,solid paraffin spectra and the content of solid paraffin was established,so as to predict the amount of paraffin added in the butter hot pot seasoning,and achieve rapid analysis.The results showed that the established correlation coefficient of the standard curve was above 0.990 9 and the relative standard deviation of the method was 0.19 %-0.33 %,and the recovery rate was 96.63 %-108.34 %.The method was simple and rapid,and the determination results were better than the gas chromatography method.Meanwhile,the method could be applied to the determination of paraffin residue in other multicomponent complex systems.
