摘　　要：以玉米为原料的抗性淀粉具有来源广泛,制备简单、在食品当中稳定性好的特点。围绕着玉米抗性淀粉的制备方法、结构分析、理化指标、功能性及应用等内容,对国内外的玉米抗性淀粉的相关研究进行综述,同时对玉米抗性淀粉未来的应用进行展望。Corn resistant starch has the characteristics of wide source,simple preparation and good stability in food.In this paper,the preparation methods,physicochemical indexes,functionality and application of corn resistant starch were reviewed,and the future application of corn resistant starch was prospected.
