摘  要:分析不同采样地点市售马铃薯粉丝粉条铝残留量超标情况,为加强食品安全的监督和管理提供数据支撑。本实验在大中型超市、小型超市和小摊贩共抽取样品111批次,其中大中型超市未检出不合格样品,小型超市检出不合格样品1批次,不合格率为2.7%,小摊贩检出不合格样品5批次,不合格率为13.5%。在抽取的111批次样品中,有69批次样品中铝残留量>25 mg·kg^(-1),其中有6批次样品不合格,表明62.2%的粉丝粉条样品在不同程度上添加了含铝添加剂,5.4%的粉丝粉条样品中添加的含铝添加剂超出了食品安全国家标准规定的限量值。The aluminum residue of potato vermicelli noodles sold in different sampling places was analyzed to provide data support for strengthening the supervision and management of food safety.In this test,111 batches of samples were extracted in large and medium-sized supermarkets,small supermarkets and vendors,among which no unqualified samples were detected in large and medium-sized supermarkets,1 batch of unqualified aluminum samples were detected in small supermarkets,with the unqualified rate of 2.7%,and 5 batches of unqualified aluminum samples were detected by vendors,with the unqualified rate of 13.5%.Among 111 batches of samples taken,69 batches were found to have residual aluminum>25 mg·kg^(-1),6 batches of samples were found to be substandard.The data showed that 62.2%of the samples added aluminum additives to different degrees,and 5.4%of the samples added aluminum additives exceeded the limit value stipulated by the national food safety standards.
