摘  要:为探究不同氮添加量下竹屑发酵栽培大球盖菇的产量与品质,以竹屑为主要原料,采用麦麸作为氮添加,在竹屑培养料中分别添加不同量的氮素进行堆肥及栽培试验。结果表明,氮添加可以促进竹屑发酵腐熟,改善竹屑的理化性质,显著(P<0.05)提升大球盖菇的蛋白质和多糖含量,降低可溶性糖含量,但对总酚无显著影响。矿质元素随氮添加呈“V”型变化趋势。过多的氮添加会抑制大球盖菇的生长,降低生物学效率,从而产生重金属污染的风险。T2处理(92%竹屑+8%麦麸)虽生长速度较慢,但生物学效率达到了86.66%,重金属残留最低,营养品质综合评价最高。The effect of nitrogen source addition on the cultivated Stropharia rugoso-annulata with bamboo sawdust was studied.Bamboo sawdust were used as the main raw material,wheat bran was used as nitrogen source,and different amounts of nitrogen source were added to bamboo sawdust culture material.Nitrogen source addition could promote the fermentation and decomposition of bamboo sawdust and improve the physical and chemical properties of bamboo sawdust.Nitrogen source significantly(P<0.05)increased the protein and polysaccharide content of S.rugoso-annulata,reduced the soluble sugar content,but had no significant effect on the total phenol.Mineral elements showed a’V’trend with the addition of nitrogen source.Excessive nitrogen source inhibited the growth of S.rugoso-annulata and reduced biological efficiency,resulting in the risk of heavy metal pollution.Although the growth rate of T2 treatment(92%bamboo sawdust+8%wheat bran)was slow,the biological efficiency reached 86.66%,the residue of heavy metals was the lowest,and the comprehensive evaluation of nutritional quality was the highest.
