摘  要:为提升冷藏加州扁鸟蛤的营养和品质特性,研究了迷迭香提取物对冷藏鸟蛤的抗氧化作用。在4℃冷藏过程中,对照组和迷迭香提取物处理组的加州扁鸟蛤脂质和蛋白质均发生一定程度的水解和氧化,且相关指标均呈现相同的变化规律。与新鲜样品相比,贮藏3 d后,对照组和处理组样品的巯基质量摩尔浓度分别降低了45.37%和37.56%;羰基质量摩尔浓度分别提高了3.84倍和2.45倍;表面疏水性分别提高了2.31倍和1.15倍;硫代巴比妥酸值分别提高了4.18倍和2.53倍;酸值分别增大了0.50倍和0.49倍;PUFA(EPA和DHA)的相对含量均略有下降,而饱和脂肪酸(SFA)的含量略有上升;荧光强度均呈上升趋势。与对照组相比,迷迭香提取物处理组的冷藏鸟蛤各项指标均较佳,说明迷迭香提取物对冷藏加州扁鸟蛤具有良好抗氧化保护作用。To improve the nutritional and quality characteristics of the frozen clam,the antioxidant effect of rosemary extract on the frozen clam was studied.In the process of 4 ℃ cold storage,the lipid and protein of Clinocardium californiense in the control group and the rosemary extract treatment group were hydrolyzed and oxidized to a certain extent,and the relevant indexes showed the same change rule.After 3 d,compared with the fresh samples,the concentration of mercapto group in the control group and the treatment group decreased by 45.37% and 37.56%,respectively;the molar concentration of carbonyl group increased 3.84 times and 2.45 times,respectively;the surface hydrophobicity increased by 2.31 times and 1.15 times,respectively;the thiobarbituric acid value increased 4.18 times and 2.53 times,respectively;the acid value increased 0.50 times and 0.49 times,respectively;the relative content of PUFA(EPA and DHA) decreased slightly,while the content of saturated fatty acid(SFA) increased slightly;the fluorescence intensity showed an upward trend.Compared with the control group,the treatment group had better indexes of frozen clams,indicating that rosemary extract had good antioxidant protection on frozen clams.
