摘 要:二噁英是一类持久性有机污染物,也是典型的环境内分泌干扰物,具有强烈的毒性,极难降解,在生态环境中可持久存在。二噁英类物质可通过食物链富集并在生物体内累积,影响人体健康,近年来引起人们的广泛关注。本文对二噁英在食品中的污染来源、污染情况、目前的法规管理及毒理情况进行了综述,为二噁英的污染状况研究提供参考。此外,本文分析了目前欧盟对食品中二噁英的监控法规标准,以期为我国食品中二噁英类物质污染的残留限量的制定及二噁英类污染物的监管提供参考。Dioxin is a kind of persistent organic pollutant and a typical environmental endocrine disruptor.It has strong toxicity,is extremely difficult to degrade,and can persist in the ecological environment.Dioxin like substances can be enriched through the food chain and accumulated in organisms,affecting human health,which has aroused widespread concern in recent years.In this paper,the pollution sources,pollution situation,current regulatory management and toxicological situation of dioxins in food were reviewed,providing a reference for the study of dioxins pollution.In addition,this paper analyzes the current EU regulations and standards on the monitoring of dioxins in food,with a view to providing reference for the formulation of residue limits for dioxin like substances in food and the regulation of dioxin like pollutants in China.
