摘 要:动物源食品中各种抗生素残留对人类和动物健康、食品安全以及环境的潜在危害达成世界共识,相关检测技术不断发展变化、日趋成熟,但也带来了新的机遇和挑战。文章对目前抗生素残留检测方法的最新研究进展进行了调查和综述。结果表明:当前仪器检测法、微生物检测法、免疫测定法和生物传感器法都得到了长足的发展;发展新型检测仪器、研究新的样品前处理材料和技术以及开发多种药物甚至是不同种类的药物协同检测方法为当前残留检测技术的趋势和方向。The potential hazards of antibiotic residues in animal-derived foods to human and animal health, food safety and environment have acquired the world consensus, and the relevant detection technologies have been continuously developed, changed and matured, with also brings new opportunities and challenges. In this paper, the latest research progress of antibiotic residue detection methods was investigated and reviewed. The results showed that the current instrumental method, microbial method, immunoassay method and biosensor method had been greatly developed. The development of new detection instruments, the study of new sample pretreatment materials and technologies, and the development of simultaneous detection of multiple drugs or even different types of drugs were the trends and directions of current residue detection technologies.
