摘　　要：麦芽酚系列衍生物有着悠久的使用历史,作为一种常用的添加剂,深受各行业的重视。随着合成工艺的不断完善和应用领域的不断拓宽,麦芽酚系列衍生物在各行业的适用性越来越强。本文主要论述了麦芽酚系列衍生物的发展历程、合成方法及在香精领域的应用,对麦芽酚系列衍生物的未来发展进行了预估。Maltol derivatives have a long history of use.As a common additive,they are highly valued by various industries.With the continuous improvement of synthesis technology and the widening of application fields,the applicability of maltol derivatives in various industries is getting stronger and stronger.In this paper,the development history,synthesis methods and applications in flavor fields of maltol derivatives were described,and the future development of maltol derivatives was predicted.
