摘　　要：Just before uprooting my life to move to China I took time to reflect upon the potential food challenges I might face should I make the move.To complicate matters further,I am a lifelong vegetarian(although not a vegan).Back then there were only two certainties in my mind.First,I would get all the deliciously fried tofu my heart could desire.Second,I would have to kiss farewell to dairy,especially cheese.
