摘 要:为探讨油茶果处理方式对油茶籽活性成分的影响,分析阴干、晒干和烘干3种干燥方式下香花油茶(C.osmantha)和岑软3号油茶(C.oleifera'Cenruan 3')籽仁和籽壳中茶多酚、角鲨烯和生育酚的含量。结果表明,茶多酚同时存在于籽仁和籽壳中,籽壳中的含量高于籽仁;角鲨烯和生育酚主要存在于籽仁中,生育酚以α-生育酚为主。与岑软3号油茶相比,香花油茶籽中的茶多酚和角鲨烯含量较高,生育酚含量较低。3种干燥方式下,两种油茶的茶多酚含量在籽仁和籽壳中均表现为阴干>晒干>烘干;角鲨烯含量在籽仁中均表现为烘干>晒干>阴干;总生育酚含量在籽仁中均表现为阴干和烘干差别不大,两者均高于晒干。可根据不同目的,对不同油茶果进行不同处理,以获得更好的使用效果。In order to investigate effects of treatments for oil-tea camellia fruits on active components of seeds,contents of tea polyphenols,squalene and tocopherol in seed kernels and seed shells of C.osmantha and C.oleifera'Cenruan 3'were analyzed by shade drying,sun drying and oven drying.Results showed that tea polyphenols existed in seed kernels and seed shells,and contents in seed shells were higher than those in seed kernels.Squalene and tocopherol mainly existed in seed kernels,andα-tocopherol was main component of tocopherol.Compared with C.oleifera'Cenruan 3',contents of tea polyphenols and squalene were higher and content of tocopherol was lower in C.osmantha seeds.Contents of tea polyphenols in seed kernels and seed shells of two kinds of oil-tea camellia were in order of shade drying>sun drying>oven drying.Contents of squalene in seed kernels were in order of oven drying>sun drying>shade drying.Contents of total tocopherol in seed kernels had not significant differences by shade drying and oven drying,which were higher than those by sun drying.According to different aims,it was suggested to deal with oil-tea camellia fruits by different drying methods for different oil-tea camellia,which could obtain better effect.
