摘  要:我国目前生猪养殖主要是外来品种如“杜长大”等,虽然其生长性能较高,但在肉的色香味上明显不如我国地方品种猪。如何通过饲料营养适度改善猪肉品质和风味,在满足消费者对优质美味猪肉的需求上具有较为重要的意义。近年研究表明,发酵饲料不仅能较好地提高饲料营养品质和利用率,同时在改善肉色、提高肌内脂肪含量、调控抗氧化能力和风味等方面也发挥着重要作用。本文将从发酵饲料的现状、发酵对饲料品质的改善作用、发酵饲料对猪肉品质和风味的影响及机制等方面进行综述,旨在为发酵饲料的研发及其在优质猪肉生产中的应用提供理论依据和技术支撑。At present,most pigs raising in China are foreign breeds such as“Duroc×Landrace×Yorkshire”.Although“Duroc×Landrace×Yorkshire”have high growth performance,they are obviously inferior to Chinese local breed pigs in terms of pork color,aroma and taste.How to moderately improve the quality and flavor of pork through feed nutrition is of relatively great significance to satisfy consumers’demand for high-quality and delicious pork as quickly and easily as possible.Recently,studies have shown that fermented feed can not only improve feed utilization,but also play critical roles in improving meat color,increasing intramuscular fat,regulating antioxidant and flavor.This paper will review the current situation of fermented feed,the effect of fermentation on feed quality improvement,and the effects and mechanism of fermented feed on pork quality and flavor,in order to provide theoretical basis and technical supports for the research and development of fermented feed and its application in high-quality pork production.
