摘 要:长期高脂肪饮食(HFD)会诱发机体氧化应激、炎症和肠道微生物菌群紊乱。为了解山西老陈醋调节血脂代谢的作用机制,采用高脂饲料喂养法建立大鼠高脂血症模型,考察不同剂量山西老陈醋对高脂血症大鼠的体质量、血清生化指标、肝功能指标、抗氧化水平及肠道菌群等影响。结果表明,山西老陈醋的干预能够显著降低高脂血症大鼠体质量的增长趋势,改善大鼠血清脂质代谢水平指标,并且对高脂血症大鼠肠道菌群的多样性和结构具有显著的正向调节作用,其中乳杆菌属(Lactobacillus)、阿克曼氏菌属(Akkermansia)等有益菌丰度上调,拟杆菌属(Bacteroides)、脱硫弧菌属(Desulfovibrio)和瘤胃球菌属(Ruminococcus)等致病菌丰度下调。此外,山西老陈醋可显著提升抗氧化指标,降低氧化应激反应,增加血清中肝功酶水平,显著降低炎症因子的水平,有显著的抗氧化、抗炎效应和肝损伤保护作用。因此,推测山西老陈醋在直接改善机体脂质代谢的同时,还可通过对高脂血症大鼠肠道菌群的多样性和菌群结构的正向调节达到进一步降低血脂的效果。山西老陈醋可作为一种对抗氧化应激、炎症、恢复肠道正常微生物群落和治疗代谢性疾病的新策略。Long-term high-fat diet(HFD)induces oxidative stress,inflammation,and disturbance of the gut microbiota in body.In this paper,the effect of Shanxi aged vinegar on blood lipid metabolism and gut microbiota in hyperlipidemic rats was investigated to explore the mechanism of Shanxi aged vinegar regulating blood lipid metabolism.Rat hyperlipidemia model was established by feeding high-fat diet,and the effects of different doses of Shanxi aged vinegar on body weight,serum biochemical indexes,liver function indexes,antioxidant levels,and gut microbiota of hyperlipidemic rats were investigated.The results showed that the intervention of Shanxi aged vinegar could significantly reduce the weight growth trend of hyperlipidemic rats,improve the related indexes of serum lipid metabolism in rats,and had a significantly positive regulating effect on the diversity and structure of gut microbiota in hyperlipidemic rats.The abundance of the probiotics including Lactobacillus and Akkermansia was up-regulation,and the abundance of the pathogenic bacteria including Bacteroides,Desulfovibrio,and Ruminococcus was downregulation.In addition,Shanxi aged vinegar could significantly improve antioxidant indexes,reduce oxidative stress response,increase the level of liver function enzymes in serum,and significantly reduce the level of inflammatory factors.It had significant antioxidant,anti-inflammatory effects and liver damage protection function.Therefore,it was speculated that Shanxi aged vinegar could further reduce blood lipids by positively regulating the diversity and structure of gut microbiota in hyperlipidemic rats while directly improving lipid metabolism in body.The research revealed that Shanxi aged vinegar might be a new strategy to combat oxidative stress and inflammation,restore normal microbial community in gut and treat metabolic diseases.
