摘  要:固态发酵是发酵工程的重要门类,如何提高发酵料床中温度、含水率分布的均匀性是固态发酵的关键技术问题,而固态发酵反应器的结构与功能是解决这一问题的基础。本文概述了静态和动态两类固态发酵反应器的详细分类、典型实例以及近年来的研究进展,对浅盘式、填充床式、转鼓式、转轴式和搅拌式等常见的固态发酵反应器的结构与功能特征进行了探讨,并介绍了压力脉动式反应器、连续反应器等新型固态发酵反应器的特点,同时对固态发酵反应器的自动化、智能化等发展趋势进行了展望。Solid state fermentation is an important category of fermentation engineering. How to improve the uniformity of temperature and moisture distribution in fermentation bed is the key technical problems of solid-state fermentation. Therefore, the structure and function of solid-state fermentation reactor is the basis to solve this problem.This paper summariz the static and dynamic solid-state fermentation reactors, introduc their detailed classification,typical examples and recent research progresses. The structural and functional characteristics of common solid-state fermentation reactors such as tray type, packed-bed type, rotating-drum type, agitated-drum type and stirred type are introduced and discussed. Novel reactors such as the pressure pulsating type and continuous type are also introduced.The developing trend of automation and intelligence of solid-state fermentation reactor is prospected.
