摘  要:分析玉米秸秆替代料对黑木耳常量营养成分、微量营养成分、功能性成分的影响。结果表明:玉米秸秆替代料能够显著增加黑木耳灰分、蛋白质、铜、铁的含量,而降低了锌、镁、锰、胶状物质的含量;玉米秸秆替代料对黑色素、多酚影响较小;对水分、总糖、还原糖、粗纤维、黄酮影响不显著。The Auricularia auricular could be edible and medicinal,whose nutritive value had great influence on health functions,accumulation of nutritional contents were significantly affected by substitute materials.In this paper,we investigated the effect of different amount of corn straw on the macronutrient components、micro components and functional components.The research results show that:The scorn straw as a ubstitute materia could increse the content of ash、protein、Cu、Fe and decrease the content of Zn、Mg、colloidal substance.The scorn straw had little impact on the melanin、polyphenol、and had no impact on the total sugar、reducing sugar、crude fibre、flavonoid.This study provides an important guidance for the studies on A.auricular cultivation.
