摘 要:人工色素的非法添加在日常生活中屡屡出现,因而对食品中特别是饮料中添加的人工色素定性定量检测就显得尤为重要,总结10种较为常见的色素检测方法,包括色谱法(高效液相色谱法、高效气相色谱法、薄层色谱法、超临界流体色谱法)、电化学分析方法 (示波极谱法、毛细管电泳)和光谱法(分光光度法、荧光光谱法、近红外光谱法、表面增强拉曼光谱法)。介绍人工色素及非法添加人工色素对人体的危害,对各种方法在检测饮料中的色素的研究进展进行综述,分析各种方法优缺点,并对未来人工色素检测的走向和发展做出展望。The illegal addition of artificial pigment appears frequently in daily life, so it is very important to qualitatively and quantitatively detect the artificial pigment added in food, especially in beverage. Ten common methods for the determination of artificial pigments are described in this article, including chromatography(high-performance liquid chromatography,high performance gas chromatography, thin layer chromatography, and supercritical fluid chromatography), electrochemical analysis methods(oscillopolarography and capillary electrophoresis) and spectroscopic methods(spectrophotometer,fluorescence spectroscopy, near infrared spectroscopy, and surface enhanced Raman spectroscopy). The artificial pigments and hazards of their illegal addition to food are described. The research progress of the above methods for the determination of artificial pigment in beverages is reviewed, as well as the advantages and disadvantages of these methods are analyzed. The trend and development of artificial pigment detection in the future are prospected.
