摘  要:白酒酿造车间具有信息化与智能化不足、管控成本高、工艺复杂等特点,如何实现生产线的全过程监控、设备维护、管控优化、保障工艺稳定、增产降耗等是当前白酒酿造车间面临的瓶颈问题。针对该问题,提出数字孪生技术的概念,建立数字孪生模型,设计白酒酿造车间体系架构,并阐述白酒酿造车间的建模与仿真、数据融合、可视化平台3项关键技术,以实现生产全过程模拟仿真与优化控制,保障酒企量质生产,降本增量,提高经济效益,加快白酒转型升级的步伐。The brewing plant of white wine is characterized by insufficient informationization and intelligence,high control costs and complex processes.How to realize the whole process monitoring of the production line,equipment maintenance,control optimization,guaranteeing process stability,increasing production and reducing consumption is the bottleneck problems faced by the brewing plant of white wine at present.To address this problem,the concept of digital twin technology is proposed,a digital twin model is established,the system architecture of the liquor brewing workshop is designed,and three key technologies,such as modelling and simulation,data fusion and visualization platform of the liquor brewing workshop,are elaborated to realize the simulation and optimization control of the whole production process,so as to guarantee the quality and quantity production of liquor enterprises,to reduce costs and increase economic efficiency,and to accelerate the pace of transformation and upgrading of liquor.
