摘  要:目的:了解某市2019年水产品中氯霉素残留污染状况并评估其食用安全风险,为加强食品安全监管提供科学依据。方法:2019年1—12月在某市多个水产品售卖场所随机抽取鱼类、虾类、蟹类、贝类4类水产品共522份,采用液相色谱-串联质谱法检测其氯霉素含量,暴露边界法结合膳食暴露量评估水产品中氯霉素残留对人体的食用安全风险。结果:522份水产品中有13份检出氯霉素,总检出率为2.49%,经卡方检验发现氯霉素在不同种类水产品的检出率差异有统计学意义,其中虾类、蟹类未见检出,鱼类检出率为0.39%,贝类检出率为6.42%;暴露边界法表明,贝类氯霉素对人体食用健康存在潜在风险,鱼类、虾类、蟹类氯霉素对人体产生的食用安全风险极小。结论:某市售水产品中仍存在氯霉素残留污染,应优先加大对贝类氯霉素的监测力度。Objective:To understand the pollution status of chloramphenicol residues in aquatic products in a city in 2019 and evaluate its food safety risks,so as to provide a scientific basis for strengthening food safety supervision.Method:In 2019,a total of 522 cases of four types of aquatic products,including fish,shrimp,crab and shellfish,were randomly selected from several aquatic product sales places in a city.Combined with dietary exposure,the food safety risk of chloramphenicol residues in aquatic products to human body was evaluated.Result:Chloramphenicol was detected in 13 cases of 522 aquatic products,with a total detection rate of 2.49%.The Chi-square test found that the detection rate of chloramphenicol in different kinds of aquatic products was statistically significant,of which shrimp and crab were not detected,the detection rate of fish was 0.39%,and the detection rate of shellfish was 6.42%.The Exposure Boundary Approach indicated that shellfish chloramphenicol poses a potential health risk to human consumption,chloramphenicol in fish,shrimps and crabs poses little food safety risk to human body.Conclusion:There is still residual contamination of chloramphenicol in a commercial aquatic product,and the monitoring of shellfish chloramphenicol should be given priority.
