摘　　要：目的了解分析商丘市2014—2018年散装熟肉制品中食品添加剂亚硝酸盐的残留情况,加强对亚硝酸盐的监督管理,防范超范围、超限量使用,保障公众身体健康和生命安全。方法2014—2018年对商丘市区内超市、农贸市场、流动商贩熟肉制品,采用按比例随机抽样的原则进行采样检测。其中,2014-2016年的样品,按照(GB 5009.33—2010)中的第二法分光光度计法进行检测;2017-2018年的样品,按照(GB 5009.33—2016)中的第二法分光光度计法进行检测,结果应用EXCEL2010进行统计分析。结果通过对商丘市2014—2018年427份熟肉制品中亚硝酸盐含量结果分析,依据中华人民共和国国家标准(GB2760-2014),其中28份样本中亚硝酸盐含量不符合国家标准(≤30 mg·kg^(-1)),不合格率6.6%。结论通过对近年来采集商丘市的熟肉制品进行检测分析,商丘市熟肉制品市场,仍然有部分商户超限量使用亚硝酸盐的现象,应引起政府管理部门的高度重视,继续加强市场管理。Objective To understand and analyze the residues of food additive nitrite in bulk cooked meat products in Shangqiu City from 2014 to 2018,so as to strengthen the supervision and management of nitrite,prevent the use of exceeding the range and limit,and protect public health and life safety.Methods From 2014 to 2018,the cooked meat products of supermarkets,farmers’markets and mobile vendors in Shangqiu City were sampled and tested by the principle of random sampling according to the proportion.Among them,samples from 2014-2016 were tested according to the second method of spectrophotometer in(GB 5009.33-2010);samples from 2017-2018 were detected according to the second method of spectrophotometer in(GB 5009.33-2016).The results were analyzed by EXCEL 2010.Results By analyzing the results of nitrite content in 427 cooked meat products in Shangqiu from 2014 to 2018,according to the national standard of the People’s Republic of China(GB2760-2014),the nitrite content in 28 samples did not meet the national standard(≤30 mg·kg^(-1)),the failure rate was 6.6%.Conclusion Through the detection and analysis of the cooked meat products collected in Shangqiu in recent years,there are still some merchants who use nitrite in excess of the limit in the cooked meat market in Shangqiu City.
