摘  要:试验旨在研究富硒乳酸菌发酵秸秆对延边黄牛瘤胃发酵的影响。试验选用延边大学动物营养与饲料科学试验室自行培养的富硒乳酸菌、乳酸菌分别对玉米秸秆进行接种,获得富硒乳酸菌发酵秸秆和乳酸菌发酵秸秆,采用单因素试验设计,分别以普通玉米秸秆(对照组)、乳酸菌发酵秸秆(试验1组)、富硒乳酸菌发酵秸秆(试验2组)为底物,采用有永久性瘤胃瘘管牛的瘤胃液制得混合人工瘤胃培养液进行体外发酵,测定与瘤胃发酵相关的指标。结果表明:(1)乳酸菌发酵后玉米秸秆的干物质和粗蛋白含量显著提高(P<0.05),感官品质更好,pH、乙酸含量、氨态氮/总氮显著降低(P<0.05),乳酸含量显著升高(P<0.05)。(2)富硒乳酸菌组和乳酸菌组12~48 h产气量显著提高(P<0.05);理论最大产气量相比对照组显著增加(P<0.05);发酵48 h的甲烷产量、p H、乙酸/丙酸(A/P)显著降低(P<0.05),氨态氮含量显著升高(P<0.05),乳酸含量、总挥发性脂肪酸、丙酸含量显著增加(P<0.05);有机物消化率(OMD)显著提高(P<0.05),代谢能(ME)值、瘤胃微生物蛋白(MCP)产量、干物质体外消化率(IVDMD)显著增加(P<0.05),粗蛋白体外消化率(IVCPD)显著降低(P<0.05),且均为富硒乳酸菌发酵的玉米秸秆组效果最佳。综上,富硒乳酸菌发酵玉米秸秆对提高秸秆饲用价值效果最好,同时可减少甲烷量。The experiment was conducted to study the effect of se-enriched lactic acid bacteria fermented straw on rumen fermentation of Yanbian yellow cattle. In the experiment, se-enriched lactic acid bacteria and lactic acid bacteria cultured by the Animal Nutrition and Feed Science Laboratory of Yanbian University were used to inoculate corn straw respectively to obtain se-enriched lactic acid bacteria fermented straw and lactic acid bacteria fermented straw. Single factor experiment design was adopted, with common corn straw(control group), lactic acid bacteria fermented straw(test group1), and se-enriched lactic acid bacteria fermented straw(test group 2) as substrates. The mixed artificial rumen culture liquid prepared from rumen juice of cattle with permanent rumen fistula was used for in vitro fermentation, and the indexes related to rumen fermentation were determined. The results showed that:(1) After lactic acid bacteria fermentation, the dry matter and crude protein content of corn straw increased significantly(P<0.05), the sensory quality was better, pH, acetic acid content, ammonia nitrogen/total nitrogen decreased significantly(P<0.05), and lactic acid content increased significantly(P<0.05).(2) The gas production of selenium rich lactic acid bacteria group and lacticacid bacteria group increased significantly from12 to 48 hours(P<0.05). The theoretical maxi-mum gas production was significantly increasedcompared with the control group(P<0.05). After48 h fermentation, methane production, p H, ace tic acid/propionic acid(A/P) decreased significantly(P<0.05), ammonia nitrogen content increased signifi-cantly(P<0.05), lactic acid content, total volatile organic matter digestibility(OMD) fatty acid content,propionic acid content increased significantly(P<0.05). Metabolizable energy(ME) and rumen microbialprotein(MCP) production, the in vitro digestibility of dry matter(IVDMD) increased significantly(P<0.05), and the in vi-mented by se-enriched tro digestibility of crude protein(IVCPD) was significantly de-creased(
