摘 要:本研究以不同发育时期的骏枣果实为试材,测定其营养成分(总黄酮、总酚、可溶性糖、蛋白质、维生素C)的含量以及抗氧化活性(DPPH自由基清除能力和ABTS+自由基清除能力)。结果表明:在骏枣果实发育时期中,总黄酮和总酚含量在坐果期最高,分别为(25.1136±0.6607)mg/g·FW和(10.8090±0.5088)mg/g·FW;蛋白质含量在白熟期最高,为(0.0640±0.0075)mg/g·FW;可溶性糖含量在全红期最高,为(7.3594±0.6928)mg/g·FW;维生素C含量的峰值位于膨大期,为(0.3338±0.0127)mg/g·FW。骏枣抗氧化活性与总黄酮、总酚及维生素C含量呈正相关,其中ABTS+自由基清除能力与总黄酮含量呈显著正相关(P<0.05),骏枣抗氧化活性与可溶性糖和蛋白质含量呈负相关。综上表明,骏枣的营养成分含量丰富,具有一定的深加工潜力。In this study,the contents of nutrients including(total flavonoids,total phenols,soluble sugar,protein,vitamin C)and antioxidant activities such as(DPPH free radical scavenging capacity and ABTS+free radical scavenging capacity)of‘Junzao’jujube fruits at different development stages were determined.The results showed that the contents of total flavonoids and total polyphenols were the highest in fruiting stage,which were(25.1136±0.6607)mg/g·FW and(10.8090±0.5088)mg/g·FW,respectively.The highest protein content was(0.0640±0.0075)mg/g·FW in white ripening stage.The content of soluble sugar in whole red stage was the highest(7.3594±0.6928)mg/g·FW.The peak value of vitamin C content was(0.3338±0.0127)mg/g·FW in the expansion stage.The antioxidant activity of‘Junzao’jujube was positively correlated with total phenols,total flavonoids and vitamin C cotent,and ABTS+free radical scavenging ability was significantly positively correlated with total flavonoids content(P<0.05).The antioxidant activity of‘Junzao’jujube was negatively correlated with soluble sugar and protein content.In conclusion‘,Junzao’jujube is rich in nutrients and has a certain potential for further orfurther processing.
