摘 要:食品添加剂是一门实践性很强的专业课程,在学习和实际应用中有一定难度。随着应用型本科院校教学改革的推进,该课程的教学方式应由理论教学为主转向理论和实践教学并重。本文分析了地方应用型本科院校在食品添加剂课程教学中存在的问题,并通过教学改革将《食品添加剂使用标准》(下文简称“标准”)运用于食品添加剂理论教学和实践教学中。实践表明,通过“标准”串联教学目标,有助于提升学生对课程的兴趣,提高知识的掌握程度。Because food additive is a very practical professional course,it is difficult for students to learn and practical application.With the advancement of teaching reform in applied undergraduate colleges,the teaching mode of this course should shift from theoretical teaching to both theoretical and practical teaching.The problems existing in the teaching of food additives in local application-oriented universities was analyzed,and the Food Additives Use Standard was applied to the theoretical and practical teaching of food additives through teaching reform.Practice showed that the combination of Food Additive Use Standard and teaching objectives can help to improve students interest in the course and improve their mastery of knowledge.
