摘  要:糖类物质的过量摄取所引起的肥胖、糖尿病和龋齿等疾病越来越普遍,已成为一大社会问题。因而高甜、低热量、口感好、绿色健康的天然甜味剂受到越来越广泛的关注。木姜叶柯是一种特色甜味资源植物,具有高甜、低热、无毒的特点,其甜味成分主要为三叶苷、根皮苷、新橙皮苷二氢查尔酮、根皮素、3-羟基根皮苷。介绍了木姜叶柯主要甜味成分的性质和特征、积累规律,代谢途径、提取方法,木姜叶柯作为新型天然甜味剂开发存在的问题及优势,以期为木姜叶柯新型天然甜味剂的开发利用提供依据。Diseases such as obesity,diabetes and dental caries caused by excessive intake of sugars are becoming more and more common,which has become a major social problem.Therefore,the natural sweeteners with high sweetness,low calorie,good taste and green health have attracted more and more attention.L.litseifolius is a kind of characteristic sweet resource plant,which has the characteristics of high sweetness,low heat and non-toxic.Its sweet components are mainly trefoil glycoside,phloretin,neo-hesperidin dihydrochalcone,phloretin and 3-hydroxyphloropyrin.This paper introduced the properties,characteristics,accumulation rules,metabolic pathways and extraction methods of the main sweet components,as well as the problems and advantages in the development of L.litseifolius as a new natural sweetener,in order to provide a basis for the development and utilization of new natural sweeteners.
