摘 要:探讨以含有磷脂的乳清蛋白粉和牛磺酸为主要原料制成的功能营养粉对小鼠记忆力的影响。选取288只SPF级昆明种雄性小鼠,分别进行两次试验,每次试验144只。每次试验分为3批,每批48只,随机分为模型对照组和低、中、高剂量组。连续给予受试物灌胃30 d后,分别进行小鼠跳台行为学实验、避暗行为学实验、水迷宫行为学实验。结果两次跳台实验,中剂量组与模型对照组比较均能减少测试期错误次数(P<0.05);第一次避暗实验高剂量组、第二次避暗实验低剂量组与模型对照组比较重测期错误潜伏期延长(P<0.05),两次避暗实验,中、高剂量组与模型对照组比较均能减少错误次数(P<0.05)。各剂量组与模型对照组比较小鼠脑组织乙酰胆碱(acetylcholine,ACh)含量升高(P<0.01),乙酰胆碱酯酶(acetylcholinesterase,AChE)活力降低(P<0.01)。两次实验结果一致,表明复合乳清蛋白粉通过调节改善小鼠中枢胆碱能系统从而改善小鼠记忆力,通过本实验可以为开发复合乳清蛋白粉改善记忆功能食品提供实验基础和开发依据。To investigate the effect of functional nutritional powder made of taurine and whey protein powder containing phospholipid on the learning and memory ability in mice.A total of 288 SPF Kunming male mice were selected for two experiments in this study.There were 144 mice in each experiment,and they were divided into 3 batches of 48 ones in each batch.The mice were randomly divided into model control group,low-,medium-and high-dose group.After continuous gavage of the test substance for 30 days,then the Step down test,the Step through test and Water Maze test were performed in turn.Compared with the model control group,the number of errors in the medium-dose group was significantly reduced(P<0.05)in two step down test.Compared with the model control group,the latency of mice in was significantly prolonged(P<0.05)in first step through test high-dose group and second step through test low-dose group.Compared with the model control group,the number of errors in the medium-and high-dose group was significantly reduced(P<0.05)in two step through test.Compared with the model control group,each dose group could significantly increase the content of ACh(P<0.01)and significantly reduce AChE activity(P<0.01)in brain of mice.Two experimental result was consistent.Compound whey protein powder can help to improve the memory by regulating and increasing the central cholinergic system on mice.This paper provides experimental basis and development basis for compound whey protein powder as a food with memory-improving function.
