摘  要:在胶质型奶糖中使用低聚麦芽糖,有改善口感与甜度的作用。快速检测原料糖浆中各组分占比,对胶质型奶糖生产质量控制有着重要的意义。本文使用配有示差折光检测器的高效液相色谱仪对原料糖浆进行测定,采用Waters XBridge BEH Amide 5μm×4.6 mm×250 mm Column色谱柱,用面积归一化法对各组分含量进行定性分析和定量计算。该方法能较为快速地分析原料糖浆中低聚麦芽糖各组分百分含量,为原料糖浆的验收提供数据参考。The use of malt oligosaccharide in gelatinous milk sugar can improve taste and sweetness.Rapid detection of the proportion of each component in raw syrup is of great significance for the quality control of the production of gelatinous milk sugar.In this paper,a high performance liquid chromatography(HPLC)equipped with a refractive index detector(RID)was used to determine the raw syrup,and the Waters XBridge BEH Amide 5μm×4.6 mm×250 mm Column was used to qualitatively analyze and quantify the content of each component by area normalization method.This method could quickly analyze the percentage content of each component of malt oligosaccharide in raw syrup,and provide data reference for the acceptance of raw syrup.
