摘  要:以壳聚糖为复合膜成膜基质,加不同量的生姜精油,以氯化钙为交联剂,甘油为增塑剂,明胶为乳化剂制备复合膜。以厚度、机械性能、不透明度、水蒸气透过系数为考察指标,通过单因素试验找出各个考察因素的优化范围,通过正交试验得到复合膜制备的最佳工艺条件。结果表明,最佳成膜工艺条件为:生姜精油取0.4 mL,甘油取1.5 g,氯化钙取0.3 g,明胶取1.5 g。该工艺条件下制得的复合膜具有厚度较薄,拉伸强度和断裂伸长率较高,不透明度和水蒸气透过系数较低的特点。In this paper,chitosan was used as composite membrane forming matrix,adding different amounts of ginger essential oil,calcium chloride as crosslinking agent,glycerin as plasticizer,gelatin as emulsifier,using physical blending and flow casting method to prepare composite films.The thickness,mechanical properties,opacity and water vapor transmission coefficient were taken as the indexes.The optimum range of each factor was found through single factor test,and the optimum technological conditions were obtained through orthogonal test.The results showed that the optimal membrane forming conditions were ginger essential oil 0.4 mL,glycerin 1.5 g,calcium chloride 0.3 g,gelatin 1.5 g.The composite film prepared by this process has the characteristics of thinner thickness,higher tensile strength and elongation at break,lower opacity and water vapor transmission coefficient.
