摘  要:为了解洮藏黑山羊的品种特性,进行屠宰试验,测定其屠宰性能及营养成分分析等。结果表明:公羊活重、胴体重、净肉重、屠宰率、净肉率均大于1岁、4岁母羊。成年洮藏黑山羊肺的重量大于1岁羊的重量;母羊肾脏大于公羊;板油母羊大于公羊。洮藏黑山羊肉蛋白质含量高、灰分和脂肪含量低、肉色鲜红,肉质细嫩,口感好,出肉率高。含有6种人体所需的必需氨基酸,且必需氨基酸占比高。肌肉中鲜味氨基酸含量有谷氨酸、天冬门氨酸、丙氨酸、甘氨酸、苏氨酸、丝氨酸和脯氨酸等鲜味氨基酸,其中谷氨酸含量较高。成年公羊脂肪酸总量为5.274 39 g/100g,其中饱和脂肪酸0.160 16 g/100g,不饱和脂肪酸5.114 23 g/100g;母羊脂肪酸总量为4.311 86 g/100g,其中饱和脂肪酸0.032 54 g/100g,不饱和脂肪酸4.279 32 g/100g。母羊的饱和脂肪酸含量均小于公羊的饱和脂肪酸含量。In order to understand the characteristics of the black goat, slaughter test, slaughter performance and nutrient analysis. The results showed that the ram live weight, carcass weight, net meat weight, slaughter rate and net meat rate were all greater than 1-year-old and 4-year-old ewes. The weight of the adult Tibetan goat lung is greater than the weight of the 1-year-old sheep;the ewe kidney is greater than the ram;the plate ewe is greater than the ram. Tao Tibetan black goat is high in protein content, low in ash and fat content, bright red in meat color, tender in meat quality, good in taste, and high in meat yield rate. It contains 6 kinds of essential amino acids needed by the human body, and occupies a high proportion of essential amino acids. The muscle umami amino acid content is glutamate, aspartate, alanine, glycine, threonine, serine and proline, of which the glutamate content is high. Adult ram fatty acids of 5.274 39 g/100 g were 0.160 16 g/100 g saturated fatty acids and 5.114 23 g/100 g, and 4.311 86 g/100 g of 0.032 54 g/100 g saturated fatty acids and 4.279 32 g/100 g. All saturated fatty acids were less than in sheep.
