摘 要:元代以忽思慧为代表的饮膳太医在实践中吸收汉唐本草知识及医学理念,结合传统游牧饮食风尚,兼收西域各族烹煮方法,融诸家之长写出《饮膳正要》一书。书中保存元代民族文化交融的实践经验与思想认识。文章试通过对其文本内容与时代背景的分析,探讨元代饮食活动所体现的东西饮食文化交融以及面对新兴物质冲击与文化观念变革时的扬弃,希望为当下日渐激烈的文化冲击提供一些思考。During the Yuan Dynasty,the doctors,represented by Hu Sihui,absorbed the knowledge and medical concepts of the Han and Tang Dynasties,combined the traditional nomadic diet with the cooking methods of the western tribes,and wrote the book Yin Shan Zheng Yao,a book of meals and drinks,incorporating the strengths of all the schools.The book preserves the practical experience and ideological understanding of the intermingling of ethnic cultures during the Yuan Dynasty.Through an analysis of the content of the text and the context of the period,this article intends to explore the intermingling of Eastern and Western food cultures as embodied in the culinary activities of the Yuan Dynasty and the abandonment of them in the face of the emerging material impact and cultural conceptual changes,in the hope of providing a reference for the increasingly intense collision of cultures in the modern times.
