摘  要:为改善高良姜素的水溶性,采用β-环糊精对其包合,并制得β-环糊精-高良姜素复合物。基于单因素试验结果,以复合物得率和包埋率作为评价指标,通过正交试验优化β-环糊精-高良姜素复合物的制备工艺条件,并考察其对小鼠机体运动疲劳的影响。结果表明,该复合物的最佳制备工艺条件为β-环糊精与高良姜素的质量比6∶1,包合温度50℃,包合时间4h,制得的复合物得率为70.2%,包埋率为78.9%,水溶性优于高良姜素,且在25~65℃范围内稳定性良好。动物实验结果显示,β-环糊精-高良姜素复合物有助于降低小鼠运动后体内尿素氮、乳酸和丙二醛的生成量,增强谷胱甘肽过氧化物酶与超氧化物歧化酶的活力,从而能够缓解机体的运动疲劳,使得其可用于相关运动食品的开发。To improve the water solubility of galangin,β-cyclodextrin was combined with galangin to make an inclusion complex(β–cyclodextrin-galangin).Based on the results of single factor experiments,orthogonal test was carried out to optimize the preparation process of inclusion complex ofβ-cyclodextrin-galangin,with inclusion rate and yield rate as evaluation criteria,and the effect of this inclusion complex on exercise fatigue of mice was investigated.The results showed that the optimal preparation process of inclusion complex ofβ-cyclodextrin-galangin were as follows:the mass ratio ofβ-cyclodextrin and galangin 6∶1,inclusion temperature 50℃,inclusion time 4h.With the optimal conditions,the inclusion rate and yield rate of the inclusion complex was 78.9%and 70.2%,respectively.The water solubility of inclusion complex was better than galangin,and extremely stable in temperaturerange of 25~65℃.The animal tests showed that the inclusion complex contributed to decreased accumulation of BUN,LA and MDA,and enhanced activity of GSH-Px and SOD,thus it could relieve the exercise fatigue of mice.Therefore,this complex can apply to development of related sport food.
