摘  要:本文选取某所高等学校17个食堂为研究对象,制定《学校食堂食品安全风险评估检查表》,开展风险评估量化打分。通过风险评估,发现该高校食堂存在部分从业人员操作规范执行不到位;设备布局仍需进一步优化;食品安全管理制度还要进一步完善和采购验收管理有待进一步加强等4个主要问题。结合实际通过坚持完善制度,构建食品安全体系;坚持人员培训,提升食品安全意识;坚持严控源头,采购绿色安全食品;坚持严格监督,形成共治监管格局以及坚持硬件升级,改善设备优化布局5个方面,不断提升食品安全管理水平,确保高校食品安全。This paper selects 17 canteens in a university as the research object,draws up a“School Canteen Food Safety Risk Assessment Checklist”,and carries out quantitative scoring of risk assessment.Through the risk assessment,four main risks are found in the university canteens,including inappropriate implementation of the operation norms of some employees,the equipment layout needs to be further optimized,the food safety management system needs to be improved,and the procurement and acceptance check management needs to be enhanced.In order to improve the level of food safety management constantly to ensure the food safety in colleges and universities,combining with the actual situation,we should establish a food safety system by insisting on improving the institution,raise food safety awareness by insisting on personnel training,purchase green and safe food by strictly controlling the food source,form a co-governance supervision pattern by insisting on strict supervision,and improve equipment and optimize layout by upgrading hardware.
