摘　　要：目的 了解慈溪市市售糖炒栗子中黄曲霉毒素B1(AFB1)的污染情况,为有关部门加强监管提供科学依据。方法 2021年秋冬季,采集慈溪市各个乡镇街道不同摊位在售糖炒栗子,共85份。采用酶联免疫吸附试验(ELISA)试剂盒进行AFB1测定。结果 在抽检的85份样品中,共有69份样品检出黄曲霉毒素B1,其含量为0.504μg/kg~2.757μg/kg,检出率为81.2%。黄曲霉毒素B1含量的超标数量为0,合格率为100%。结论 市售糖炒栗子中黄曲霉毒素B1污染比较普遍。虽未达到超标的程度,但黄曲霉毒素B1的污染需要引起相关部门的重视。在糖炒栗子销售季节有必要对销售摊点售卖的糖炒栗子进行随机抽查检验,对销售摊点进行规范化管理,做好食品安全法律法规的宣教,以避免食品卫生安全风险。Objective This investigation aims to understand the pollution status of aflatoxin B1(AFB1) in sugar-fried chestnuts sold in Cixi City, so as to provide scientific basis for the relevant departments to strengthen supervision. Methods In the autumn and the winter of 2021, 85 sugar-fried chestnut samples sold at different stalls in various townships and streets of Cixi City were collected and AFB1 was determined by enzyme-linked immunosorbent assay(ELISA) kit. Results Among the 85 sampled samples, AFB1 was detected in 69 samples with the content range of 0.504 μg/kg-2.757 μg/kg and the detection rate of 81.2%. The unqualified quantity was 0 and the qualified rate was 100%. Conclusion The contamination of AFB1 in sugar-fried chestnuts is common. Although it does not exceed the standard, AFB1 contamination needs to be taken seriously by the relevant authorities. In the seasons manufacturing and selling sugar-fried chestnuts, it is necessary to randomly check the sugar-fried chestnut sold in the sales stalls, so as to standardize the management of sales stalls and to do a good job in publicizing laws and regulations on food safety to avoid food risks.
